The Biopolymer Scientist will use scientific principles and expertise, and a broad range of advanced technologies and industrial tools for achieving company goals. This successful, self-motivated, creative, team-oriented, resourceful, adaptable, and results-oriented individual will have an expert understanding of ingredients, specifically, hydrocolloids, starches, and proteins, and their interactions. The scientist must have a strong knowledge of the structure-function relationships of hydrocolloids, along with extensive hands-on experience with evaluating ingredients, developing novel ingredients by creating chemical and physical synergies between hydrocolloids, starches, and proteins, and evaluating the functionality and performance of these ingredients in food systems.


    • Drive innovation and develop novel solutions to improve the performance of biopolymer ingredients in the company products
    • Create and characterize macromolecular interactions with a specific emphasis on the chemistry and hydrocolloids-starches-protein interactions
    • Develop experimental designs and perform experiments at the bench-top scale and support pilot work
    • Manage focused projects, working independently and collaboratively with the innovation team
    • Utilize a wide range of analytical techniques (ex. particle size analysis, stability analysis, rheology, etc.) to evaluate characteristics of biopolymer material
    • Apply statistical analysis tools to analyze and interpret the data, derive conclusions, and translate them into optimizing the product performance
    • Ensure product stability from bench-top through manufacturing and consumer use
    • Support the Innovation team in attaining short-term and long-term development goals
    • Actively support the innovation stage gate process: brainstorming and ideation sessions, concept development, concept screening, feasibility and commercialization
    • Preserve all forms of intellectual and material property generated from the above activities, including writing patents, writing protocols for novel processes
    • Advise company officers in areas of scientific and process development expertise
    • Continuously search for and vet advanced technologies that complement areas of strategic focus
    • Gather insight into industry trends and opportunities for the development of new ingredient technologies aligned with the business strategy
    • Adapt to evolving scientific and business priorities
    • Provide general laboratory support, purchase equipment, and supplies, and share in kitchen and laboratory maintenance


    • Ph.D. degree in Food Science, Food Chemistry, Starch Chemistry, Polymer Chemistry, Biochemistry, Physical Chemistry, or a related field with a strong background in hydrocolloids/starches
    • Minimum 3-year experience in academic or industrial hydrocolloids/starch research. Experience in food company ingredient and product development desirable but not required
    • Understanding of food product chemistry, analytical testing, formulation, and processes used in food manufacturing preferred
    • Mechanical ability, familiarity with scientific equipment and advanced instrumentation
    • Proven ability to combine scientific insight with strong technical skills and business acumen
    • Experience working in a matrix and highly collaborative team orientated environment
    • Excellent oral and written communication skills. Fluent in English, both written and spoken
    • Ability to manage multiple projects and priorities
    • Excellent analytical, organizational and multi-tasking skills, as well as the ability to interact and collaborate successfully with all levels and functional areas


    • Laboratory, office and kitchen environments with some travel (5%)


    • Frequent sitting at a desk, communication-using computer and phone
