We are seeking a Commissary Leader to orchestrate our regional culinary operations and ensure the delivery of outstanding food to our cafes, aligning with our mission to delight our guests every day.

This is a full-time, salaried position based at our production facility in West Sacramento, CA. This position reports directly to the Culinary Production Manager.

About the Job:
The Commissary Leader plays a crucial role in overseeing all aspects of commissary operations, managing commissary team leads and a staff of dishwasher-prep cooks and savory and pastry baker-cooks to ensure the production of high-quality food items. This position requires a blend of culinary expertise with a focus on high volume output and high efficiency, exceptional communication and people-leadership abilities, and operational management to uphold our reputation as a brand committed to Blue Bottle Coffee standards of quality.

Responsibilities:

    • Operational Excellence: Ensure precise fulfillment and timely delivery of premium quality food to all regional cafes, enhancing guest satisfaction.
    • Team Leadership: Calculate labor needs and hire, schedule, train, manage, and mentor a diverse team, ensuring high performance and fostering a culture of inclusion, integrity, and engagement.
    • Production Efficiency: Analyze commissary production metrics to continuously improve efficiency and quality, identify key performance indicators, and help devise a strategy towards continuous improvement.
    • Quality and Safety Standards: Implement and monitor objective sensory quality control, food safety, and people safety standards across the commissary operation.
    • Facility and Equipment Maintenance: Define and oversee maintenance schedules, ensuring our commissary equipment always performs well to meet our production output needs.
    • Vendor Management: Maintain working relationships and critical communication with external vendors supplying the facility with culinary ingredients, food safety supplies, and maintenance services.
    • Collaboration: Work closely with partnering departments to ensure continuous delivery of in-cafe culinary products, including Retail Operations, Procurement, and Logistics.
    • Product Innovation: Collaborate closely with the product development team and Culinary Production Manager to innovate and enhance product offerings, ensuring alignment with seasonal trends and evolving company initiatives.

You are:

You have

    • 3+ years of people management experience in bakery production or restaurant kitchens, ideally with commissary production experience at a scale and high volume servicing multiple service locations.
    • Broad knowledge of food production equipment and processes.
    • A strong dedication to fostering workplace hospitality and enthusiasm for providing feedback and working toward resolutions to cultivate high-performing teams.
    • Clear, articulate, and hospitable communication skills.
    • Comfort using online tools and software including Microsoft Suite and Google Suite.
    • Last but not least, a deep love for great coffee, food, and exceptional customer experiences.

    • This position has a salary range of $75k-80k. This salary is a good-faith estimate for this position. The final salary offer will be determined after reviewing relevant factors, which include a candidate's qualifications and experience, where appropriate.
